Thai Mini-Series: Thai-Inspired Falafel Curry

Welcome to our Thai-inspired culinary journey, where we combine the vibrant flavors of Thailand with the convenience of Infused Mediterranean Foods' ready-made falafel. In this mini-post, we'll explore how to create a delicious Thai-inspired falafel curry that will transport your taste buds to the bustling street markets of Thailand.

Ingredients:

  • 1 package of Infused Mediterranean Foods Dalal’s Original falafel

  • 1 tablespoon oil

  • 1 onion, thinly sliced

  • 2 cloves of garlic, minced

  • 2 tablespoons Thai red curry paste

  • 1 can coconut milk

  • 1 cup diced vegetables (bell peppers, carrots, snap peas)

  • Salt and pepper to taste

  • Fresh herbs and lime wedges for garnish

  • Steamed jasmine rice, for serving

Instructions:

  1. Heat oil in a large pan over medium heat. Add the sliced onion and minced garlic. Sauté until the onion becomes translucent.

  2. Stir in the Thai red curry paste and cook for another minute to release the flavors.

  3. Pour in the coconut milk and stir well to combine with the curry paste.

  4. Add the diced vegetables and falafel to the pan. Stir gently to coat everything in the curry sauce.

  5. Simmer for 10-15 minutes until the vegetables are tender and the falafel is heated through.

  6. Season with salt and pepper to taste.

  7. Serve the Thai-inspired falafel curry over steamed jasmine rice.

  8. Garnish with fresh herbs and lime wedges for an extra burst of flavor.
