South American Mini-Series: Peruvian Quinoa Salad with Falafel Croutons

Welcome back to our South American Spice mini-series! Today, we're venturing to Peru with a refreshing and nutritious twist. Get ready to tantalize your taste buds with our Peruvian Quinoa Salad topped with crispy Infused Mediterranean Foods' falafel croutons. This vibrant salad showcases the flavors of Peru while adding a delightful crunch to your plate. Let's dive in!

Ingredients:

- Infused Mediterranean Foods' falafel

- 1 cup cooked quinoa

- 1 cup cherry tomatoes, halved

- 1 cucumber, diced

- 1 red onion, thinly sliced

- 1 avocado, diced

- 1/4 cup fresh cilantro, chopped

- 1/4 cup fresh mint leaves, chopped

- Juice of 1 lime

- 2 tablespoons extra-virgin olive oil

- Salt and pepper to taste

Instructions:

1. Prepare Infused Mediterranean Foods' falafel according to the package instructions. Once cooked, cut them into small crouton-sized pieces.

2. In a large mixing bowl, combine cooked quinoa, cherry tomatoes, diced cucumber, sliced red onion, diced avocado, fresh cilantro, and fresh mint leaves.

3. In a small bowl, whisk together the lime juice, extra-virgin olive oil, salt, and pepper to create a zesty dressing.

4. Drizzle the dressing over the quinoa salad and toss gently to coat all the ingredients.

5. Heat a pan with a drizzle of olive oil and add the falafel croutons. Cook them until they are crispy and golden on all sides.

6. Sprinkle the falafel croutons over the quinoa salad just before serving to add a delightful crunch.
