Thai Mini-Series: Green Papaya Salad with Falafel

Get ready to transport your taste buds to the vibrant streets of Thailand with our Thai-inspired green papaya salad topped with crispy falafel. This refreshing and tangy salad is the perfect combination of textures and flavors.

Ingredients:

  • 1 package of Infused Mediterranean Foods falafel

  • 1 green papaya, shredded

  • 1 carrot, shredded

  • 1 cup cherry tomatoes, halved

  • 1/4 cup fresh lime juice

  • 2 tablespoons fish sauce (or vegan alternative)

  • 2 tablespoons palm sugar (or brown sugar)

  • 2 cloves of garlic, minced

  • 2 Thai chilies, minced (adjust to your desired level of heat)

  • Handful of fresh cilantro, roughly chopped

  • Handful of roasted peanuts, crushed

Instructions:

  1. In a large bowl, combine the shredded green papaya, carrot, and cherry tomatoes.

  2. In a separate small bowl, whisk together the lime juice, fish sauce, palm sugar, minced garlic, and minced Thai chilies until the sugar is dissolved.

  3. Pour the dressing over the papaya mixture and toss to coat everything evenly.

  4. Cook the falafel according to the package instructions until crispy and golden brown.

  5. Break the falafel into smaller pieces and sprinkle them over the salad.

  6. Garnish with fresh cilantro and crushed roasted peanuts.

  7. Give it a gentle toss to combine all the ingredients.

  8. Serve the Thai green papaya salad with falafel as a refreshing and light meal.
